doc: fix the 5.2-to-5.3 upgrade guide

Fixes https://github.com/scylladb/scylladb/issues/13993

This commit applies feedback from @mykaul added in
https://github.com/scylladb/scylladb/pull/13960 after
it was merged.

In addition, I've removed the information about
the Ubuntu version the images are based - the info
doesn't belong here, and, it addition, it causes
maintenance issues.

Closes #14703
